100% organic Melon de Bourgogne, the white grape of Muscadet, from the oldest vines of the Grand Mouton vineyard in Nantes, which were planted in 1937 and 1945. Hand harvested. After primary fermentation, the wine spends six months sur lie. After secondary fermentation, using yeast from the primary fermentation, the wine is then aged sur lattes for 12 months. Light in body, fresh and precise, this is an elegant sparkler with a bit less weight than Champagne. Lime and yellow apples make an appearance alongside white flowers and slight leesiness, with very fine bubbles pervading. Finishes a bit pithy and mineral driven. Louis Métaireau — along with his band of vignerons d’art, as his like-minded group of producers were known — was instrumental in restoring the reputation of the Muscadet appellation in the middle of the 20th century.
