A blend of Côdega, Rabigato, Viosinho, Arinto, Gouveio; all certified organic and biodynamic from low-yielding 30+ year old vineyards in the Cima Corgo region. Hand harvested, given a long maceration, then foot-trodden in round, temperature-controlled granite lagares for four hours everyday after harvest. Fermentation carries on to near dryness before fortification with pure brandy spirit. Ageing takes place in small old oak casks in the cellars of Vila Nova de Gaia for an average 3.5 years before bottling. This is on the drier side of White Ports, with 51 g/L RS. Caramelized orange, white honey, candied lime and lemon peel, fragrant honeysuckle, dried apricot, and anise roll through this sweet wine, finishing with a wild orange twist. Try a Porto Tonico by pouring this with tonic over ice and garnishing with citrus. It’s a delicious drink for spring and summer!
