Two-thirds Chardonnay and one-third Pinot Noir, all organic and estate grown in the Vallee de la Marne. Full malolactic fermentation and 3.5 years of lees aging. Light gold with a big mousse that dissipates and then leaves an active fine bead. Baked bread, sweet almonds, minerals, and citrus on the nose. light with fresh acidic zest, well tempered by the dosage. Apples and lemon with cleansing minerality. Classic and easy, focused. Stéphane Coquillette is a fourth-generation winemaker in Champagne. His late father, Christian, ran Saint-Chamant from 1950 until 2020, and he encouraged his son out to start his own estate when Stéphane was 25. Meticulously committed to organic practices, Stéphane avoids herbicides at all costs. Farming is done by hand, including trellising and pruning. Excellent value.
